1. Classic Falafel

- 1 cup dried chickpeas, soaked overnight
- 1 small onion, roughly chopped
- 3 cloves of garlic

- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking soda
- Salt and pepper to taste
- Vegetable oil for frying

Instructions:
1. Drain and rinse the soaked chickpeas. Place them in a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper. Pulse until the mixture is coarsely ground but not pureed.
2. Transfer the mixture to a bowl, cover, and refrigerate for at least 1 hour.
3. Shape the mixture into small balls and flatten slightly into a patty shape.
4. Heat the vegetable oil in a deep fryer or large skillet over medium heat. Fry the falafel until golden brown and crispy, about 3-4 minutes per side. Drain on a paper towel-lined plate.

2. Baked Falafel
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup fresh parsley
- 1/4 cup fresh cilantro
- 1 small onion, roughly chopped
- 2 cloves of garlic
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking soda
- Salt and pepper to taste
- Olive oil

Instructions:
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking soda, salt, and pepper. Pulse until the mixture is well combined.
3. Shape the mixture into small balls and place them on the prepared baking sheet. Flatten slightly into a patty shape.

- Salt and pepper to taste
- Vegetable oil for frying

Instructions:
1. Follow the same instructions as the classic falafel recipe, adding the chopped jalapeno and cayenne pepper to the mixture for an extra kick of heat.
2. Fry the falafel as directed until golden brown and crispy.
